I don't want employees to see all projects?

Log in to lets first. A wheel (settings) appears at the bottom left of the screen.

On the Configuration tab, you can activate “Impact Focus.” If this is activated, you can actively go into any project that you want to show to your employees and switch it to “visible” (above the project title). Now employees will only see projects that you have set to visible.

Please note that as an admin, you can still see all projects, as you should also be able to make them visible.
